- Searing shrimp, perfecting creamy grits, and seasoning with Cajun spices.

- Making a creamy, tangy remoulade - and learning how to use a knife and presentation

Gumbo: Chicken and Andouille Sausage / Veggie Gumbo
- Making a dark roux, building flavors with the "Holy Trinity" (onion, bell pepper, celery)

Red Beans and Rice - Vegetarian Version
- Slow-cooking beans, building layers of flavor with spices (and smoked eggplant/meats - probably use only one , and perfecting rice.

Buttermilk Drop Biscuits
- Biscuit dough technique (shortcut recipe to achieve fluffy biscuits), baking basics.

Bread Pudding with Bourbon Custard Sauce
Preparing custard, soaking and layering bread for texture, and making a silky bourbon sauce for finishing.
